It's been a fairly good day. Began with leftover vege from last night cooked in four eggs with some coconut oil. I'd made my coffee to drink as I was driving to work. First time without the cream. It had more flavour than I've noticed before, despite being about one third decaf.
Lunch was leftover vege and meat from last night. About two thirds of a two litre container full.
My work day was busy. I had more to do than I'd been led to expect. In the early afternoon I discovered someone had decided to reset a large part of one of my areas. For reasons I have yet to fathom. I became boiling mad and set about using my anger to fuel my reset of the reset. If it had've been done properly and with a logic I could see, then maybe I would've left it alone. It was just weird and messy. Anyway, a quick word to my manager later confirmed I'd done the right thing and questions would be asked. It was a level of stress day I haven't had in a while and I'm utterly tired. My dinner is cooking and I have only to get up and cook the meat.
Dinner tonight is a nice lamb chop cooked with another for lunch tomorrow, and a bunch of roast vege. Again. I need to add some uncooked vege. I'm a roast vege girl. Tonight the vege was cooked in a coconut oil and duck fat mix, my lamb chops were cooked in beef tallow. I used the remaining tallow to cook up four eggs and some of the roast vege for breakfast tomorrow. In my lunch container is a lamb chop, roast vege and a container of baby cucumbers and carrots. I've got it all prepped and ready to go as I've been asked to start at 6am tomorrow, an hour earlier than usual.
Uh, so, I went and cooked the lamb and then scoffed the lot before I remembered about taking a photo. So only two today:
